“Less is more”
A conscious choice to opt for moderation in all things. What could be better, what could be simpler and more modest than a good piece of bread!
And so, close to my village, I decided to open a sour-dough bakery using only organic flour.
There’s bread, and bread.
Good, with taste , bite, and crunch.
Good for the body (without pesticides, additives, conservatives, sugars, fats)
Sough dough , for a natural fermentation, long life, and easily digestible.
With a variety of organic flour , like petit epeautre, Khorasan, rye, wheat, rice, and buckwheat
This project will also be our contribution to a world which is changing, and becoming more ecological, more responsible and fair. For me, for us, and above all for our children.
Le porteur de projet
Pascal Coutaz is 48 years old, he has a super wife Frederique, 3 great kids, Charlotte 12, Antonin 10 and Coline 7. They all live in the beautiful village of Lourmarin, in the Luberon, Provence.
Architect for 20 years
20 years of building in the town and the countryside, throughout France, sensibly and simply.
20 years of creativity, reliability, pleasure and pride.
It was over a family evening meal talking to my children, that I understood that to start making a better world, I had to back my words with action s, and begin a second career based upon my convictions.
I therefore decided that having built shelters for people, I would provide healthy nourishment.
What could be more simple, more effective and essential than bread !!

Describe your project goal
Your aid will help build the visible part of the iceberg so that you can be proud of participating and can say ‘it was me who made this possible.’
- The manufacture and installation of the bakery’s sign “Haut Les pains! Boulangerie en Provence,” so that people can find us and also realise that we are unique.
- The creation of the internet site to explain our project, and to give people the desire to eat good organic local sough dough bread.
- The design of the bags for the bread , which we will use on a daily basis in the bakery so that clients don’t get covered in flour!
On the back, will be the surnames, names, or aliases, of all the generous contributors. It’s a little like on the booklet that accompanies a Compact Disc, where the musicians thank all their friends and family, all those near and far who have participated in their musical project.
And this will be the same, you will have your name on the bag as a big thank you for your help.
Why you?
For two years I have been working on this project. First of all of course, I had to train as a baker. And for two years you have encouraged and supported me. Each time I have explained my progress I have seen in your eyes a desire to help me succeed. Shocked to begin with, you have rallied to my cause of changing things just a little bit.
And so, a few weeks away from the opening of the bakery, I would like to offer you the opportunity of participating.

Of course if you look at the global cost of the project your share will seem small. But for me your participation is much more than just symbolic. It shows that there are lots of us who want to change things. To eat better, to eat healthily and to eat locally. Good taste, good for our health, good for our children.
